Eat IT up......

My Aunt Sara is a wonderful cook and this is one of my favorite recipes of hers! Salsa at it's best! Try it and you'll be addicted! Love it, had to share it!

You could eat it by the spoonfuls

Oh the mixture, so tasty.

Here is the recipe for Corn Salsa:

 1 can of yellow corn (Green Giant Niblets)

2 cans of white shoepeg corn (Green Giant)

1 can of black beans

1 can of black-eyed peas

1 bunch of cilantro, chopped

5 green onions, chopped

4-5 tomatoes, chopped

2-3 avocados, chopped

Toss with one recipe of good seasons italian mixed to less oil.

Also use red vinegar for the mix.

ENJOY, I know you will.

Project Derek

My brother Derek had his Eagle project today. If you have ever been involved with an Eagle project you know the hard work put into being an Eagle scout. Anyway our little fam was ready to party. Grant was a helper, I was the photographer and Claire was in charge of being cute. Derek decided to do his project at eisenhower medical center, where Grant and my dad work. The hospital grounds are beautiful and it just so happens that Grant's department covers the grounds.....Derek's Eagle project involved picking fruit from the trees on the hospital grounds. The fruit goes to hiddenharvest.org then they distribute the fruit to people in need. Derek had A LOT of help and it was much needed. It was a great project and I think it is very important for young men to achieve their Eagle. Grant actually has his job now because of it, it just so happens that Grant's boss is an Eagle Scout. He is an avid Eagle Scout, socks and all!:) Anyway I'm proud of my brother he followed in his Dad and Brothers footsteps, here is a recap of our day with him.

Oh Claire

Claire is 11 weeks today weighing in at 12 lbs! Sad news is that she has been sick this week. So baby bear has been sleeping in our bed, Grant and I have had the worst sleep ever but Claire loves it. Last night I woke up to Claire crying and Grant was holding her hand. ha Grant has been super crazy at work, so he crashes at night. He still managed to give her some love. :) Even though I was super sleep deprived my heart was so full, I just love those two. I would have taken a picture if my camera would have been ready. Anyway here are some pictures that wrap up our last couple of days.

From The Side Lines

Claire and I went to my brothers first track meet of the season, Husband joined us later. I love watching runners, there is something freeing about running, it amazing what our bodies can do! I cannot wait to be able to run again, I got a little out of shape with little chick in my belly and also eating chocolate every day but we are workin on it!:) It was so fun to watch these brothers of mine. Claire enjoyed being held by Grandpa and Grandma, also being entertained by Uncle Jake and Aunt Weezy. They are a bunch of characters! Here is a recap of the day.......Go Uncles.
